Chef Paul Niedermann inherited his cooking talent from his Executive Chef father, and discovered his passion for it in high school. He pursued his dream by attending Johnson & Wales University in North Miami, where he worked his way up to Chef de Partie at the Biltmore Hotel in Coral Gables. After graduation, he became a Junior Sous Chef at the St. Regis Hotel. Chef Paul rose to fame as the winner of Hell’s Kitchen season 9 in 2012, earning him the Head Chef position at BLT Steak in New York City. He later served as Chef de Cuisine of BLT Steak in Los Angeles, and Executive Chef of BLT Prime in Doral, Florida. Chef Paul’s approach to modern cuisine is simplistic, allowing the seasons and ingredients to speak for themselves. He considers his guests to be like family, ensuring that no one leaves hungry. When not in the kitchen, Chef Paul enjoys fishing and playing golf, and spending time with his wife and family in South Florida.
